Ingredients
Units Scale
- 2 tbsp (30 mL) rice vinegar
- 2 tsp (10 mL) sugar
- 1 medium carrot, julienned
- 1/2 small daikon radish, julienned
- 2 packages (198 g/7 oz each) king oyster mushrooms
- 1 tbsp (15 mL) canola oil
- 1/4 cup (60 mL) hoisin sauce
- 2 French baguettes
- 2 tbsp (30 mL) spicy mayo*
- 1/2 cucumber, julienned lengthwise
- Optional garnish: Fresh cilantro
Instructions
- Whisk vinegar and sugar in a medium bowl until sugar dissolves. Add carrot and daikon radish; toss to combine. Set aside at room temperature to pickle while preparing mushrooms.
- Using a fork, scrape down stems of king oyster mushrooms to shred into thin, pulled-pork-like strands. Slice any remaining caps thinly so nothing goes to waste.
- Heat oil in a large non-stick skillet over medium-high heat. Add shredded mushrooms and cook, stirring occasionally, until tender, 5 to 6 minutes.
- Pour hoisin sauce directly into skillet with mushrooms. Toss to coat and cook until sauce bubbles and thickens into a sticky coating; about 2 to 3 minutes. Remove from heat.
- Slice baguettes in half and then cut open lengthwise. Spread spicy mayo generously on the inside. Layer on cucumber, followed by warm, glazed king oyster mushrooms.
- Drain pickled carrots and daikon before placing them on top of mushrooms. Garnish with cilantro, if desired.
TIPS:
- For kids who might find the baguette crust too hard to chew, swap the baguette out for soft brioche hot dog buns.
- To make the spicy mayo, mix together regular mayo with a splash of sriracha or garlic chili sauce.
