Description
This one-pan dinner brings together gnocchi, sweet potatoes, smoked sausage, and earthy crimini mushrooms. Everything cooks together, creating tender gnocchi with lots of flavour and golden edges. It’s a colourful, comforting meal that practically makes itself!
Ingredients
- 2 medium sweet potatoes, diced into 1/2 inch cubes
- 1 medium red onion, cut into wedges
- 2 packages (454 g) crimini mushrooms, quartered
- 375 g smoked sausage, sliced into rounds (about 5 links)
- 1 package (500 g) shelf-stable potato gnocchi
- 3 tbsp (45 mL) canola oil
- 2 tbsp (30 mL) Italian seasoning
- Salt and black pepper, to taste
Optional: Shredded Parmesan cheese
Instructions
- Preheat oven to 400°F (200°C).
On a large rimmed baking sheet (use two sheets if crowded to ensure maximum crispiness), combine sweet potatoes, onion, crimini mushrooms, sausage, and uncooked potato gnocchi. Drizzle with oil and sprinkle with Italian seasoning, salt, and black pepper. Toss thoroughly to coat. Spread into a flat, single layer.
Bake, tossing after 15 minutes, until gnocchi are plump and golden-crisp on edges, sweet potatoes are fork-tender, and crimini mushrooms are browned; about 25 to 30 minutes.
Remove from oven, sprinkle generously with grated Parmesan, if using, and serve immediately.
