Pork Chops with Mushroom Gravy

Pork chops are pan-seared perfectly and covered in a savoury mushroom gravy in this classic dish. Serve alongside mashed potatoes and green beans for a complete meal.


  • 4 boneless pork chops
  • 1 tsp each salt and ground pepper
  • 1/4 cup all-purpose flour
  • 2 tbsp oil
  • 1 package (227 g) sliced crimini mushrooms
  • 1 large portabella mushroom, stem removed, thinly sliced
  • 1 large sweet onion, sliced
  • 1 tsp Italian seasoning
  • 1 tbsp Dijon mustard
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream (35%)
  • 2 tbsp fresh thyme


  1. Using paper towels, pat pork chops dry.
  2. Add flour, salt, and pepper to a shallow bowl; whisk to combine. Lightly coat pork chops in flour. Set remaining flour aside.
  3. Heat oil in a large nonstick skillet over medium-high heat. Add pork chops; sear for 4-5 minutes. Flip and sear for another 4-5 minutes or until browned and internal temperature has reached 145°F. Remove pork chops from pan; set aside.
  4. Add mushrooms and onions to the skillet; cook, stirring occasionally until mushrooms are browned and the onions are translucent, about 10 minutes.
  5. Sprinkle over reserved flour and add Italian seasoning and mustard; stir until mushrooms are coated. Add chicken broth, stirring until sauce thickens. Add cream, stir until heated through, about 1 minute.
  6. Add pork chops back to the pan, spooning over sauce and mushrooms. Reduce heat to low and simmer for 2-3 minutes. Sprinkle with fresh thyme before serving.


  • Pork chops should be less than 1-inch thick to ensure they are cooked through in the time suggested.
