Description

These mushroom stuffed zucchini boats are a quick and flavourful, vegetarian weeknight dinner. Tender zucchini halves are filled with a savoury mixture of mushrooms, couscous and pesto, then topped with melted mozzarella and Parmesan cheese.

Ingredients

Scale
  • 4 medium zucchinis
  • 2 tablespoons olive oil
  • 3/4 tsp salt, divided
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 225g/8oz mushrooms, finely chopped
  • 1/2 cup couscous
  • 1/2 cup vegetable broth
  • 1/2 cup pesto
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella or cheddar cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 375F. Halve zucchini lengthwise. Scoop out flesh and set aside, leaving 1/4-in. border. Arrange in a 9×13” baking dish, you may need to cut some of the zucchini shorter to make them all fit.
  2. Brush the zucchini boats with 1 tablespoon of olive oil and season with ¼ tsp salt and freshly cracked pepper.
  3. Chop the zucchini flesh and add to chopped mushrooms.
  4. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
  5. Add the onion and garlic, and sauté until fragrant, about 2-3 minutes.
  6. Add the mushrooms, zucchini flesh and 1/2 tsp of salt, and cook until they release their moisture and become tender, about 5-7 minutes, until it has a thick and jammy texture and most of the liquid has evaporated.
  7. Meanwhile, cook the couscous according to package directions.
  8. Fluff the couscous with a fork and add it to the mushroom mixture in the skillet. Mix well and stir in pesto.
  9. Spoon the mushroom and couscous mixture into the prepared zucchini boats, pressing down slightly to pack the filling. Sprinkle the grated Parmesan cheese and mozzarella or cheddar cheese.
  10. Cover with foil and bake for 15 minutes. Remove the foil and cook for an additional 10 minutes until the cheese is melted and bubbly.
