Description

This mac & cheese is creamy, cheesy, and full of flavour that the whole family will love. Sautéed crimini mushrooms add a savoury, earthy depth and a satisfyingly meaty texture, perfectly paired with gooey gruyère and cheddar. Bonus: these mushrooms are packed with B vitamins, potassium, and antioxidants, so every comforting bite is a little boost of goodness for the kids too.

Ingredients

Units Scale
  • 1/4 cup salted butter, for the mushrooms
  • 4 cloves garlic, smashed and roughly chopped or minced
  • 454g crimini mushrooms, roughly chopped
  • 1 tsp fresh chopped thyme
  • Salt and pepper to taste
  • 450g macaroni
  • 1/2 cup salted butter, for the roux
  • 1/2 cup all-purpose flour
  • 3 cups milk, 3.25% preferred
  • 2 cups Gruyere cheese, grated
  • 2 cups sharp cheddar cheese, grated

Instructions

  1. Melt the ¼ cup of butter in a large heavy-bottomed pot over medium-high heat. Add the garlic and sauté until fragrant, about 1 minute, then add the mushrooms and stir to coat in the butter. After 2-3 minutes, season with the thyme, salt, and pepper. Continue cooking, stirring occasionally, until the liquid has evaporated and the mushrooms are slightly browned. Transfer the mushrooms to a small bowl and set aside.
  2.  Bring a large pot of salted water to a boil. Add the macaroni and cook for 1 minute less than the instructed cooking time on the package.
  3. Meanwhile, return the heavy pot to the stove over medium heat. Melt the ½ cup of butter, then whisk in the flour. Cook until golden brown, about 2-3 minutes, then pour in the milk. Continue whisking until the sauce is smooth and thickens, then stir in the cheese and mushrooms. Season with salt and pepper to taste, then remove from the heat. Once the macaroni is cooked, drain it and add it to the cheese sauce. Gently stir until smooth and creamy.
  4. Serve immediately and enjoy!
