These Mushroom Butter Masala Puffs bring together comforting Indian flavours and buttery puff pastry for a deliciously snackable treat.
Ingredients
For the mushroom butter masala filling:
- 1 tbsp butter
- 1 tsp neutral oil
- 1 small red onion, finely chopped
- 2 tsp ginger garlic paste
- 1 green chili, finely chopped (optional)
- 200 g white button mushrooms, chopped
- 2 medium tomatoes, puréed (fresh or canned)
- 1/4 tsp turmeric powder
- 1/2 tsp Kashmiri red chili powder (for color + mild heat)
- 1/2 tsp garam masala
- 1/2 tsp kasuri methi (crushed between palms)
- 2 tbsp fresh cream (or malai)
- 1/2 cup cheese
- Salt, to taste
- Fresh coriander, finely chopped & 2 tsp sesame seeds
For the puff pastry:
- 1 sheet store-bought puff pastry, thawed
- 1 tbsp butter for brushing
Instructions
Make the filling:
- Heat butter and oil in a pan over medium heat.
- Add chopped onions and sauté until soft and light golden.
- Stir in the garlic ginger paste, and green chili. Cook until aromatic.
- Add chopped mushrooms with water and cook until they release their moisture and shrink down (about 5–6 minutes).
- Add turmeric, chili powder, and salt. Sauté for 2 minutes.
- Pour in the tomato purée and cook till the raw smell disappears and oil begins to separate (5–7 minutes).
- Stir in garam masala, crushed kasuri methi, and cream. Let it simmer until thick and luscious. Add grated cheese and mix.
- Finish with chopped coriander and let the filling cool completely. (Don’t skip this step! Warm filling = soggy pastry.)
Assemble the puffs:
- Preheat your oven to 200°C (390°F).
- Lightly roll out the puff pastry and cut into even rectangles or squares. Brush with butter for a glossy golden finish. Use fork to make some holes.
- Spoon a small amount of filling in the center of each piece.
- Place on a baking tray lined with parchment paper.
Bake:
Bake for 15–20 minutes or until beautifully golden, puffed, and crisp. Finish with chopped coriander and sesame seeds
Pro tips:
- Cool the filling completely before assembling to avoid soggy pastry.
- Serve warm with green chutney, ketchup, or even a yogurt dip!
