Ingredients
Scale
- 2 cups (500 ml) crimini mushrooms, diced
- 1 cup (250 ml) zucchini, grated (1 small zucchini)
- 2 large hard boiled eggs, crumbled
- 3 Tbsp (45 ml) olive oil
- 500g extra lean ground beef
- 1 jar (680 ml) passata sauce
- 1/2 cup (125 ml) and 9 cups (2.3 L) tap water, divided
- 1 Tbsp (15 ml) dried Italian seasoning
- 1/2 tsp (2.5 ml) salt
- 1 pinch, pepper
- 16 ounces lasagna sheets (18 noodles), dried
- 1 ball (125g) mozzarella, sliced thinly or shredded
- 1/2 cup (125 ml) parmesan cheese, grated
Instructions
- Preheat the oven to 400F.
- Begin by cleaning the mushrooms using a paper towel or a mushroom brush. On a cutting board, finely dice the mushrooms. In a medium sized bowl, grate the zucchini using the grater side with the medium cheese shredder blades. Heat a large skillet over medium heat with olive oil. Add the diced mushrooms and zucchini and cook until tender. Add the ground beef and cook until golden brown, about 7 minutes.
- Bring to boil a large pot of water with 9 cups of water and cook lasagna noodles according to package instructions. Set aside.
- To the large skillet, add your jar of passata sauce, ½ cup water, Italian seasoning, salt and pepper to the beef and mushroom mixture. Stir until well combined, let this cook on medium heat for 10 minutes.
- Prepare a 9×12 baking tray by layering a small spoonful of the mushroom and meat sauce on the bottom of the pan. Next, add a layer of pasta sheets and another layer of sauce followed by a spoonful of crumbled hard boiled eggs, and a thin layer of the mozzarella. Sprinkle some of the parmesan on top. Add another layer of pasta sheets on top and keep repeating these layers until you run out of ingredients (should make around 5-7 layers). Sprinkle the top with the parmesan cheese and bake for 35-40 minutes or until golden brown and bubbly. Allow to rest for 5 minutes before slicing. Enjoy!
