Description

The perfect backyard barbecue recipe for sharing, this Grilled Mushroom with Whipped Goat Cheese recipe comes together in less than 15 minutes and is the ultimate crowd-pleaser. It’s balanced with creaminess and lightness from the whipped cheese, savoury from the mushrooms, and with a touch of sweetness from a drizzle of honey.

Grilled Mushrooms

  • 45 crimini mushrooms
  • 23 oyster mushrooms
  • 1 portabella mushroom
  • 2 tbsp extra virgin olive oil
  • 2 tsp chopped fresh rosemary
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Whipped Goat Cheese

  • 300g goat cheese
  • 100g cream cheese
  • 2 tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp pepper

For Serving

  • 1 baguette, sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 1 tsp chopped fresh rosemary
  • Salt and pepper, to taste

Instructions

  1. Preheat the barbecue or grill on medium-high heat.
  2. Add goat cheese, cream cheese, honey, salt, and pepper to the food processor container and blend for 20-30 seconds, until smooth. Place in the fridge until serving.
  3. Drizzle baguette slices with olive oil and set aside.
  4. Brush or wipe mushrooms clean with a brush or paper towel. Place the mushrooms in a bowl, drizzle with olive oil, and season with rosemary, salt, and pepper. Toss to coat the mushrooms.
  5. Place the mushrooms, cap side up, on the barbecue. Grill for 8-10 minutes, turning the mushrooms halfway through, until cooked through and tender. Transfer to a bowl.
  6. During the last few minutes of cooking the mushrooms, place the bread on the barbecue and toast for 2 minutes, turning once, until they have grill marks and the edges are toasted.
  7. To serve, roughly spread the whipped goat cheese on a large plate, ensuring there are lots of divots to catch the mushrooms and the juices. Pile the mushrooms in the centre of the goat cheese, then drizzle with additional honey, a sprinkling of rosemary, and season with salt and pepper to taste. Enjoy with the toasted baguette for dipping.

Notes

This recipe is wonderful with many varieties of mushrooms and can also be made simply with one variety such as crimini, button, or portabella mushrooms.

Depending on their size, oyster mushrooms may take less time to grill, about 5 minutes total.
