Ingredients

Units Scale

Chicken:

  • 2 chicken breasts or thighs, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 teaspoons crushed garlic
  • 2 teaspoons salt
  • 1 tablespoon finely chopped dill
  • 1 tablespoon oregano
  • 4 tablespoons fresh lemon juice + 1 tablespoon to sprinkle over the top once cooked
  • 1 teaspoon lemon zest
  • 1 small red onion, cut into large cubes
  • 2-3 teaspoons chilli flakes (optional for the heat lovers)

Vegetables:

  • 4 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons oregano
  • 1 red pepper, cut into 2-inch cubes
  • 1 zucchini, cut into thick slices
  • 7 large crimini mushrooms, quartered

Mushroom and Garlic Sauce:

  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons olive oil
  • 1/2 teaspoon crushed garlic
  • 1/4 teaspoon salt
  • 1/3 teaspoon lemon zest
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Marinate the Chicken: Mix all chicken marinade ingredients in a bowl. Add the chicken pieces and coat well. Cover and refrigerate for at least 2 hours, or up to 24 hours.
  2. Prepare the Vegetables: In a separate bowl, toss all the vegetables ingredients until well coated.
  3. Assemble the Skewers: Thread chicken pieces onto skewers, adding red onion between the pieces. Thread the vegetables onto separate skewers. Tip: If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  4. Grill: Grill the chicken and vegetable skewers over medium heat until cooked through and slightly charred. Sprinkle 1 tablespoon of lemon juice over the cooked chicken.
  5. Make the Mushroom Sauce: Blend the yogurt, mayonnaise, olive oil, garlic, salt, lemon zest, lemon juice and 5 grilled mushroom pieces until smooth. Pour into a bowl and stir in the chopped dill.
  6. Serve: Serve the skewers with warm pita bread or rice, and a simple side of cucumbers, tomatoes, red onions, and crumbled feta cheese. Optional: A squeeze of lemon and a drizzle of olive oil over the top brings everything together beautifully.
