Description
A deliciously rich and creamy mushroom soup that is easy to make in one pot! And don’t forget to serve with a warm buttered roll or rustic crusty bread for dipping.
Ingredients
Scale
- 2 tbsp oil
- 1.5 lbs sliced mixed mushrooms (crimini, shiitake, oyster), sliced
- 1 cup yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp each salt and fresh ground pepper
- 4 tbsp butter
- 1/4 cup all-purpose flour
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Garnish: Fresh thyme or chopped parsley
Instructions
- Heat oil in a large soup pot or Dutch oven over medium-high heat. Add mushrooms and onions; cook, stirring occasionally until mushrooms are browned and the onions are translucent, about 8-10 minutes. Remove half of mushrooms from pot; set aside.
- Add garlic, Italian seasoning, and salt and pepper; cook 30 seconds until fragrant.
- Add butter, stirring until melted. Add flour, stirring to coat mushrooms, about 30 seconds.
- Slowly add chicken broth, stirring to combine. Allow soup to simmer, about 10 minutes.
- Using an immersion blender, blend soup until smooth. Return reserved mushrooms to the pot.
- Add cream, stirring to combine. Allow soup to come to a simmer, about 5 minutes, until thickened and creamy.
- Serve hot garnished with fresh thyme or parsley.
Tips:
- Remove and discard the stems from shiitake mushrooms as they can be woody.
- Use half & half cream (10% fat) to cut down on the fat, but heavy cream makes for a richer soup.
